Atkins / South Beach Friendly Low Carb Desserts


Pumpkin pie.

Coming into the New Year and going through the holiday season, the amount of desserts you will be faced with is going to be overwhelming. Here are some low carb desserts which taste as great as their higher carb counterparts, but pack less of a punch per serving. Bring them to your holiday parties to ensure you don’t step outside your diet boundaries, without having to explain your choices to anyone. Even your hostess won’t know these desserts are low carb, unless you decide to tell.

Low Carb, Crustless Pumpkin Pie

1 ½ cups of fresh or canned pumpkin puree

3 eggs

½ cup Splenda brown sugar substitute

¾ cup skim milk

1 teaspoon cinnamon

1 teaspoon pumpkin pie spice

Mix all ingredients together and pour into pie pan which has been sprayed with Pam. Bake at 350’ for 30 – 40 minutes. Toothpick should come out clean when inserted into middle of pie. This pie contains 100 calories and < 5g carbohydrates per serving.

Low Carb Cheesecake

3 packages of no fat cream cheese

3 eggs

1 gram of Splenda sugar substitute (25 packets)

1 tbsp. vanilla extract

1 teaspoon lemon juice

1 tbsp. cocoa powder (optional)

Mix all ingredients together and pour into pie pan greased with butter. Bake at 350’ for 40 – 50 minutes, until top is cracked and golden. Let cool and refrigerate for at least 4 hours before serving. Drizzle with sugar free chocolate syrup if you used the cocoa powder for a chocolatey treat. One serving of this delicious cheesecake is < 7 g carbohydrates per serving.

Cantaloupe Sherbet

1 medium ripe cantaloupe

1 can fat free sweetened condensed milk

2 tbsp honey

Cut melon in half and remove all seeds. Peel and cut into large chunks. Mix all ingredients in blender until smooth. Pour into freeze proof container and free overnight until firm. Use ice cream scoop to serve. This yummy sherbet contains < 8g of carbohydrates per serving
