How to Make Baked Potato Soup


  • 1 bulb of garlic (large, 1/4-inch-slice cut off top)
  • 3 lbs potatoes (rinsed, pierced with a fork, about 6 large baking potatoes)
  • 6 slices uncooked turkey bacon
  • 4 cups reduced-sodium chicken broth
  • 1 1/2 tbsp fresh thyme, chopped
  • 1/2 tsp table salt
  • 1/4 tsp black pepper
  • 6 tbsp reduced-fat sour cream
  • 6 tbsp low-fat cheddar cheese, shredded
  • 6 tbsp scallions, sliced


  1. Preheat oven to 400 deg F.
  2. Wrap the entire bulb of garlic in tin foil and place on a baking sheet with the potatoes. Place in the oven.
  3. Cook for 45 minutes to an hour, until both the garlic and potatoes are cooked. Remove from oven and let cool.
  4. Cook bacon in a frying pan over medium heat. Lay them on paper towel afterwards to soak up the oil and chop into small pieces.
  5. In a large pot over medium heat, squeeze out the garlic pulp and mash the potatoes along with the broth, thyme, salt, and pepper until warm.
  6. Serve with a sprinkle or bacon, reduced fat sour cream, low fat cheddar cheese, and scallions.
