How to Make Broccoli Salad

Ingredients

  • 3 cups small broccoli florets
  • 1/4 cup chopped red onion
  • 1 pint grape tomatoes, halved
  • 1/2 cup toasted slivered almond
  • 6 -8 ounces gouda cheese, cut into 3/4-inch cubes (low fat)
  • 1/8 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 1/4 teaspoon sugar
  • 1/4 teaspoon black pepper
  • salt, to taste

Directions

  1. Lightly steam the broccoli in a vegetable steamer until bright green and slightly tender.
  2. While steaming the broccoli, prepare the dressing by whisking together the oil, vinegar, sugar, pepper, and salt.
  3. Combine the broccoli with the onion, tomatoes, nuts and cheese and pour dressing over the salad. Toss to coat.
