How to Make Chicken and Broccoli Curry


  • 1 tablespoon red curry paste
  • 1 (14 ounce) can coconut milk, lot fat
  • 1/4 cup fresh basil (or 1/8 c. dried)
  • 1 can bamboo shoot, drained
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 cup chicken broth or 1 cup chicken stock
  • 1 lb chicken breast, cut into 1/2 inch strips
  • 3 -4 cups fresh broccoli florets
  • 1 red pepper, chopped
  • 1 tsp of olive oil
  • 2 – 3 tbsp of cornstarch mixed in cold water, if you like a thicker curry


  1. Heat olive oil in a large frying pan over medium heat.
  2. Brown chicken strips in the oil until it is no longer pink.
  3. Add in the curry paste and coconut milk and combine well. Just before the mixture begins to boil, reduce the heat and allow it to simmer for 5 – 10 minutes.
  4. **If you like your curry thicker, mix the cornstarch and water mixture in now and stir to combine.**
  5. Add the remainder of the ingredients into the pan and allow to simmer for an additional 10 – 15 minutes until the broccoli and peppers are tender.
  6. Remove from heat and serve over brown rice.
