How to Make Christmas Pork Roast with Cranberries and Mustard

  • 1 (2 -2 1/2 lb) lean pork loin roast, trimmed of excess fat
  • 1/4 teaspoon all-spice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, fresh ground if possible
  • 2 tablespoons honey dijon mustard
  • 2 tablespoons honey
  • 2 teaspoons orange zest, finely grated
  • 2 tablespoons dried onion flakes
  • 1 cup dried cranberries

  1. Make your rub by combining the all-spice, salt, and pepper. Rub over the entire surface of the roast and place into the slow cooker.
  2. Create the sauce/marinade by combining the mustard, orange zest and onion flakes. Spread evenly over the roast and sprinkle with the cranberries.
  3. Add 1/2 ” of vegetables stock to the bottom of slow cooker – pour down the side of the cooker so you don’t disturb the sauce.
  4. Cook pork on low for 4 to 6 hours or on high for 2 – 3 hours.
  5. Remove pork and allow to rest for 10 minutes before carving into slices.
  6. Serve with the sauce drizzled on top of each serving.
