How to Make Curried Lentils and Sweet Potatoes


  • 2 large sweet potatoes, cut into 1/2-inch cubes
  • 1 onion, diced
  • 1 cup lentils
  • 3 cups water or 3 cups stock
  • 1 tablespoon curry powder
  • salt
  • pepper


  1. If you are using dried lentils, pick through the dried beans and pick out ones that are split and any stones you find. Cover them with water and bring to a boil for 5 minutes. Reduce the heat and simmer until tender, roughly 30 – 45 minutes.
  2. If you are using canned lentils, omit the first step.
  3. Mix the stock, lentils and curry powder in a large pot over medium-high heat. Allow to boil but bring to a simmer for at least 10 minutes.
  4. Add the sweet potatoes, onions and salt to taste. Keep the soup covered and simmering.
  5. Cook for 20 minutes, until the sweet potatoes are soft and the lentils are tender. Allow the excess liquid to reduce or thicken using a mixture of cornstarch and cold water.
  6. Top with ground pepper to taste.
