How to Make Curried Sweet Potato and Lentil Soup

Ingredients

  • 1 1/2 cups red lentils
  • 4 cups water
  • 1 sweet potato
  • 1/2 teaspoon sea salt
  • 4 tablespoons extra virgin olive oil
  • 1 medium onion (diced)
  • 2 garlic cloves (diced)
  • 3 teaspoons turmeric
  • 2 teaspoons cumin (ground)
  • 1 1/4 teaspoons coriander (ground)
  • 1/8 teaspoon cayenne pepper (optional)

Directions

  1. Begin by rinsing the lentils in a fine strainer under cold water. Pick out any pebbles and other debris. Put the lentils plus water to cover them plus two inches into a medium sized sauce pan and bring to a boil.
  2. Reduce heat and let simmer for 20 minutes. Scoop off any foam that accumulates on the top of the water and throw away. When you have fifteen minutes left, add in the sweet potato.
  3. In skillet, heat oil over medium heat and sauté the onions, garlic, and spices over low heat. Cook until translucent, about 5 minutes.
  4. Add the onion and garlic mixture into the lentils and water and cook until sweet potato is tender.
  5. Remove from heat and serve.
  6. Tip: You can also puree this soup into batches and serve smooth.
