How to Make Health(ier) Chocolatey Cupcakes

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips, melted in either a double broiler or in the microwave
  • 3/4 cup applesauce
  • 1/4 cup margarine (softened)
  • 1 cup Splenda granular
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 3 egg whites
  • 3/4 cup skim milk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350 deg.
  2. Line a cupcake tin with suitable cupcake liners.
  3. In a large bowl, combine the flour, baking soda and salt. Sift until smooth.
  4. Cream together the butter, applesauce, sugar, brown sugar, Splenda, vanilla extract, milk, and egg whites. Add in melted chocolate and mix well to combine.
  5. Pour slowly into the flour mixture and stir until just combined. Do not over mix.
  6. Pour equally into cupcake liners and bake for 30 minutes.
  7. Check for doneness by inserting a toothpick into the cupcake and seeing it if comes out clean.
  8. Remove from baking sheet and allow to cool.
