How to Make Healthy Cinnamon Buns


  • 1 cup nonfat milk
  • 1 tablespoon vegetable oil
  • 1 tablespoon sugar
  • 1 teaspoon table salt
  • 1 tablespoon yeast, about 1 package
  • 2 1/2 cups whole wheat flour, sifted, divided
  • 1/4 cup unpacked brown sugar
  • 1/4 cup dark corn syrup
  • 2 teaspoons ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon orange zest, grated
  • 1/4 cup raisins or 1/4 cup dried cherries or 1/4 cup cranberries


  1. In a small sauce pan, mix the milk, oil, sugar and salt and heat to lukewarm.
  2. Mix the yeast with two tbsp of warm water and let it sit for 5 minutes.
  3. Stir this yeast mixture into the warmed milk.
  4. Using a large mixing bowl, pour the milk in and slowly beat in half of the flour by hand. Mix enough of the flour in to become a soft dough.
  5. Let the dough rest for 10 minutes and then punch it down. Allow it to rise three times and then roll it into a ball.
  6. Very lightly coat the outside of the dough with cooking spray and wrap with plastic wrap to rise for an hour.
  7. Meanwhile, mix the brown sugar, corn syrup, cinnamon, nutmeg and orange zest together and set aside.
  8. Once it has risen, roll the dough out onto a floured surface and create a 12 X 10 inch rectangle.
  9. Spray the dough with coughing spray and coat with the brown sugar mixture. Sprinkle with raisins.
  10. Roll the dough up, similar to a jelly roll. Cut it into 12 equal pieces and place the buns on a cooking spray covered baking sheet.
  11. Cover with plastic wrap again and let rise for another hour.
  12. Preheat the over to 350 deg F, and bake buns for approximately 30 minutes until they are browned on top.
  13. Cool completely before taking off sheet.
