How to Make Moroccan Chickpea Soup


  • 1 can of chickpeas
  • 10 cups of water or a mix between low sodium vegetable broth and water
  • 1 tbsp of olive oil
  • 2 cups of onions
  • 2 – 3 tomatoes, diced
  • 8 cloves of garlic, minced
  • 1 small hot pepper, minced or 1 tbsp of red pepper flakes
  • ½ cup of parsley, chopped finely
  • ½ cup of cilantro, chopped finely
  • ½ cup of kale, chopped finely
  • 1 tsp of black pepper
  • 1 tbsp of lemon juice
  • 1 tbsp of paprika
  • 1 tsp of tumeric
  • Slices of lemon


  1. Heat the oil in a large stock pot and sauté the onions, garlic, and hot pepper / pepper flakes until the onions are translucent. Do not let the garlic burn as it will make the dish taste bitter.
  2. Add the spices in and mix well to make the vegetables fragrant.
  3. Add the chickpeas, broth, tomatoes, parsley, cilantro, kale, and lemon juice and mix well.
  4. Let the soup simmer for 45 minutes, until all the flavors have blended together.
  5. Serve with a slice of lemon [optional].
