How to Make New Years’ Lentil and Sausage Soup


  • 1 lb Italian sausage or Italian turkey sausage or tofu sausage to reduce fat
  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 2 large carrots, chopped
  • 1 small zucchini, chopped
  • 6 cups chicken broth
  • 2 (14 1/2 ounce) cans diced tomatoes, undrained
  • 2 -3 garlic cloves
  • 1 teaspoon salt
  • 2 cups dry lentils
  • ¼ tbsp of balsamic vinegar, to taste
  • black pepper, to taste
  • red pepper flakes, to taste
  • basil, to taste
  • oregano, , to taste
  • parsley, , to taste
  • thyme, , to taste


  1. Brown your sausage, drain off the fat and slice into diagonal pieces.
  2. Combine all ingredients in a large pot and bring to a boil.
  3. Reduce heat , cover, and simmer for an hour until lentils are tender. Remove from heat.
  4. Add vinegar and sprinkle with Parmasean cheese in individual bowls.
