How to Make Oatmeal Pancakes

Ingredients

  • 1 cup of rolled oats
  • 3/4 cup of whole wheat flour
  • 1 tbsp of baking soda
  • 1 tsp of cinnamon
  • 1/2 tsp salt
  • 1/2 cup of palm sugar (or Splenda Brown Sugar mix)
  • 1/2 cup of unsweetened applesauce
  • 1 egg
  • 1 cup of milk
  • Agave nectar or sugar free syrup
  • 1 cup of raspberries, blueberries, or sliced strawberries
  • Cooking spray, butter flavor

Directions

  1. In a large mixing bowl, add all the dry ingredients together and stir well to combine.
  2. In another bowl, mix all the wet ingredients together until well mixed.
  3. Slowly add the wet ingredients into the dry ingredients.
  4. Lightly coat the bottom of a large frying pan with cooking spray and put on medium heat.
  5. Spoon 3" - 4" diameter circles of pancake batter into the drying pan and cook until brown and flip, approximately 3 to 4 minutes per side.
  6. Serve topped with fruit and 2 - 3 tbsp of agave nectar or sugar free syrup.
