How to Make Perfect Roasted Turkey

Ingredients

  • 1 cup of margarine
  • 2 lemons, one halved and one squeezed and zested
  • 1 head of garlic, individual slices peeled
  • 1 tbsp thyme
  • 1 tsp of sage
  • 1 tsp sea salt
  • 1 tbsp black pepper
  • 1 Spanish onion, quartered
  • 1 small apple, cored and quartered
  • 1 fresh turkey, 10 – 12 lbs

Directions

  1. Preheat your oven to 350’F.
  2. Create your marinade/rub by melting the margarine in a small saucepan and mixing in the lemon juice, zest, thyme and sage. Set aside.
  3. Clean out the turkey, remove giblets, pull any remaining feathers, trim excess fat and wash turkey with cool water and pat dry.
  4. Place the turkey in the roasting pan and salt and pepper the inside and outside of the bird.
  5. Stuff the turkey with the halved lemon, remainder of the spices, onion, garlic, and apple.
  6. Brush the outside of the turkey with the margarine mixture, under the skin where possible without ripping it.
  7. Tie the legs of the turkey together with twine to keep the vegetables in.
  8. Roast the turkey at 350F for 2 to 3 hours until the internal temperature at the center of the bird reads at least 165’F. Try not to cut into the meat to check the temperature because it will cause the bird to lose some of its moisture.
  9. Once removed from the over, cover loosely with aluminum foil and let it rest for 20 minutes. This allows the juices to redistribute throughout the bird.
  10. Carve and eat.
