How to Make Sausage and Pear Stuffing


  • 1 loaf of whole grain bread, cubed and slightly dried.
  • 2 tsp of extra virgin olive oil or grapeseed oil
  • 1 lbs of Italian turkey sausage, or tofu sausages
  • ½ cup of low sodium vegetable or chicken broth
  • 4 stalks of celery, washed and chopped
  • 1 large onion, chopped
  • 1 pear, either Bosc, Anjou or Bartlett)
  • 1 egg
  • 1 tbsp of sage
  • ½ cup of parsley. Chopped
  • 1/2 tsp salt and pepper
  • Cooking spray


  1. Preheat the oven to 350’F and spray a baking dish with cooking spray.
  2. Spray a large frying pan with cooking oil and warm over medium heat. Add the sausage meat, removed from the casing, and cook until browned. Remove and put in large bowl.
  3. Mix the bread cubes with the meat.
  4. Return the frying pan to the heat, add 2 tbsp of broth and deglaze the pan by scraping up the brown bits of sausage flavour from the pan. Add the olive oil, onion and celery and cook until softened, about 5 minutes. Add the pear and sage and cook for an additional 3 to 5 minutes.
  5. Remove the pan from the heat and add the vegetables to the bowl of bread cubes and meat.
  6. Stir in beaten egg and all remaining seasonings.
  7. Spread the stuffing into the baking dish and bake until the top is crispy, approximately 30 minutes.
  8. Remove from heat and let sit for 5 minutes before serving.
