How to Make Simple Chickpea Couscous


  • 1 cup water
  • 1 cup uncooked couscous
  • 1 (15 ounce) can chickpeas, drained
  • 2 roma tomatoes, thinly sliced (plum)
  • 1 cucumber, peeled and sliced
  • 1/4 teaspoon olive oil
  • ¼ sliced black olives
  • 1 cup of diced spinach leafs
  • 1/4 teaspoon lemon juice or 1/4 teaspoon white vinegar
  • garlic powder, to taste
  • salt and pepper, to taste


  1. Cook couscous as per directions on the package: boil water and stir in couscous. Allow to stand for 5 minutes to absorb the water.
  2. Once absorbed, fluff couscous with a fork.
  3. Mix in the chickpeas, tomatoes, cucumber, olives and spinach leaves. Stir in oil and lemon juice or vinegar.
  4. Season with salt, pepper, and garlic powder and serve.
