How to Make Mango and Sweet Potato Vegetable Roast

Ingredients

  • 1 or 2 large sweet potatoes, chopped
  • 1 large sweet onion, chopped
  • 1/2 cup orange bell pepper, sweet, chopped
  • 1/2 cup red sweet pepper, chopped
  • 1 teaspoon ginger, minced
  • 1/8 cup golden raisin
  • 1 cup mango, chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar
  • 2 tablespoons flour
  • 1 cup mango juice
  • 2 tablespoons white vinegar
  • 1 tablespoon margarine

Directions

  1. Preheat your oven to 350’F and spray a baking dish with cooking spray.
  2. In a large bowl, mix the sweet potatoes, onions, peppers, ginger, raisins, mango, salt, pepper and nutmeg and toss lightly to coat.
  3. In another bowl, mix the brown sugar and flour along with mango juice and vinegar. Pour the liquid over the vegetables and dot with margarine.
  4. Cover and bake for 1 hour.
