How to Make Tofu Cacciatore

Ingredients

  • 1 onion, finely diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 4 cloves of garlic, minced or 2 tbsp of minced garlic
  • ¼ cup fresh basil, chopped and separated
  • ½ cup fresh parsley, chopped
  • 2 - 18oz. cans of diced tomatoes
  • 2 tbsp tomato paste
  • Cayenne pepper and/or crushed pepper flakes, to taste
  • 2 lbs of firm tofu
  • ¼ cup of flour, seasoned with salt and pepper
  • Whole wheat spaghetti or linguini, cooked to directions
  • Grated parmesan cheese for garnish

Directions

  • Start by pressing the water out of the tofu using a cheesecloth or paper towels and sandwiching the tofu in between with a heavy weight on top. The idea is to slowly squeeze out the excess moisture to have a thicker, “meatier” texture to the tofu. To this for about 15 minutes, and then remove the cloth or paper towels and replace with fresh ones for another 15 minutes.
  • Preheat the oven to 350 degrees F. Heat oil in a large skillet coated with cooking spray over medium heat.
  • Add the onions, garlic, and bell peppers and sweat the vegetables for about 5 to 8 minutes.
  • Add in the oregano and basil and the optional cayenne pepper or red pepper flakes. Thoroughly mix to coat all the vegetables.
  • Add in the tomato paste and allow to cook “into” the vegetables. Stir until well coated and fragrant.
  • Add the diced tomatoes and bring the sauce to a boil. Reduce to low and simmer for 20 minutes.
  • While the sauce simmers, discard the wet paper towels or cloth you used to press the tofu and cut it into ½” thick slices.
  • Heat another skillet with cooking spray over medium - low heat.
  • Dredge the tofu slices in the flour and fry each side until lightly browned on both sides. Remember to spray the pan after you’ve finished each batch to avoid sticking.
  • When you are removing them from the skillet, place in a glass baking dish in one layer.
  • Pour the sauce over the tofu and sprinkle with the parmesan cheese and additional chopped basil.
  • Bake for 30 minutes or until everything is thoroughly heated.
  • Serve over a bed of whole wheat spaghetti or linguini.
