How to Make Tortellini Tomato Spinach Soup


  • 1 tablespoon olive oil
  • 1/2 cup minced onion (about 1/2 small onion)
  • 1 garlic clove, minced
  • 4 -6 cups chicken broth or 4 -6 cups vegetable broth
  • 1 (14 ounce) can whole tomatoes, coarsely chopped
  • 1 package fresh tortellini
  • salt
  • black pepper
  • 10 ounces fresh spinach or 10 ounces frozen spinach, defrosted and chopped
  • 1/4 cup freshly grated parmesan cheese


  1. Heat olive oil in a large stockpot over medium to high heat.
  2. Add the garlic and onions and sauté until the vegetables are sweated and translucent, roughly 5 – 8 minutes.
  3. Add in the broth and tomatoes and turn the heat up to high. Allow the soup to come to a boil.
  4. Add the tortellini in and cook accordingly to the package instructions, anywhere from 10 to 20 minutes. When the tortellini’s are almost cooked, mix the chopped spinach and stir.
  5. Flavor with salt and pepper accordingly.
  6. Remove from heat and serve with a garnish of grated parmesan cheese.
