How to Make Vegetable Soup


  • 1 1/2 cups of chopped kale
  • 1 large onion chopped
  • 3 stalks of celery, chopped
  • 3 large tomatoes, chopped
  • 3 cloves of garlic, chopped
  • 1 can of chick peas, rinsed
  • 1 cup of carrots, grated or julienned
  • 12 cups of low sodium vegetable stock
  • 1 pkg of of gnocci pasta
  • 3 bay leaves
  • 3 tbsp of chopped basil
  • 1 tsp of olive oil
  • 1 tsp of cayenne pepper
  • 1 tbsp of ketchup
  • 1 tsp of lemon juice


  1. In a large stock pot, heat the oil along with the basil and onions.
  2. Once the onions have turned translucent, add all of the chopped vegetables and saute for five to ten minutes until tender.
  3. Add in the vegetable stock and bay leaves and let the soup simmer for 20 minutes. Add the cayenne, ketchup and lemon juice.
  4. Mix in the gnocci and leave the soup, without mixing, for another ten to fifteen minutes. When the gnocci rises to the top of the soup, remove from heat.
