How to Make White Chicken Chili


  • 4 boneless, skinless chicken breasts, cut into 1” chunks
  • 2 cans of navy beans or white cannelloni beans
  • 1 can of corn, kernels
  • 1 can of condensed cream of chicken soup
  • 1 ¾ cup of chicken broth
  • ½ cup of sour cream
  • 3 cloves of garlic, chopped
  • 1 small green pepper, chopped
  • 1 packet of low sodium taco seasoning
  • 1 can of green chilies, optional
  • Chives, chopped for garnish
  • Monterey jack cheese, grated for garnish
  • 1 tbsp of olive oil, for stove top cooking


  1. Slow cooker instructions:
  2. Combine all ingredients in crock pot.
  3. Replace lid and cook either on high for 4 – 5 hours or on low for 7 – 8 hours.
  4. Just before serving, stir in the sour cream.
  5. Serve with a handful of cheese and chives.
  6. Stove top directions:
  7. Heat olive oil in a large pot over medium heat.
  8. Add in the garlic, green pepper, chilies and chicken breast and allow flavors to mix for about 10 minutes or until the chicken turns white.
  9. Stir in the condensed cream of chicken, chicken broth, corn, beans and taco seasonings and bring to a boil.
  10. Reduce heat and allow simmering for 30 – 45 minutes.
  11. Just before serving, stir in the sour cream.
  12. Serve with a handful of cheese and chives.
